Salsiccia Tradizionale (approx. 150g)
Our Salsiccia comes in two flavours: mild (dolce) and spicy (piccante). Made with pork from the region’s renowned pigs, and spiced with black pepper, locally grown chillies and wild fennel. To eat alone with a slice of bread, as part of a charcuterie board, as a topping on pizza, or try as a tasty addition to an omelette.
Capocollo (approx. 150g)
Beautifully marbled with a silky texture, capocollo is handcrafted from a careful selection of meats obtained from the loin and the pork cup, treated with natural spices and aromas, and left to mature for months. Excellent thinly sliced as an appetiser or paired with aged cheeses and pickles.
Cured Ricotta (approx. 200g)
Salted cheese with a white paste that is left to dry in the oven, which gives it a delicious smoky flavour. Made from sheep and goat's milk, hard paste and excellent grated, served in flakes or pieces for an aperitif.
Marc Pecorino (approx. 200g)
Produced only during the red wine mark season, it is matured for at least 60 days in marc. It has the unmistakable, very special and savoury flavour of good wine. Delicious alone or accompanied with cold cuts and vegetables.
Onion Crispy Focaccia (approx. 150g)
The focaccia with onions an Italian classic. It is such a popular snack in Liguria that people even have it for breakfast by dipping the focaccia in milk! And it is understandable why: the sweetness and pungent taste of the onion accompanying the crispy dough, produce an incredible combination of flavours.
