Ninkasi is the name of the ancient Sumerian goddess of beer, this divine Belgian-style saison has copious amounts of New Zealand hops, freshly harvested Somerset apple juice and wild yeast. This producer has a love of fermentation, barrel-ageing, and most importantly flavour. These beers have a unique terroir; their house wild yeast was captured in a neighbouring cider orchard including often forage seasonal, wild ingredients from around California. The use of alternative fermentations, unorthodox yeasts, seasonally-foraged and unusual ingredients is what helps them deliver remarkable flavour by nature.
