Cooking: Put the duck in a roasting tin belly-side up in the oven for at least 12 hours after defrosting it. Set the oven to 175 degrees. Place the duck in the oven, belly-side up, so the duck oil will collect while it cooks. Check the duck to see if it is done after 45 minutes. Check the meat regularly if it is still pink when you cut off a small piece. If so, make sure it does not burn. When done cooking, let the duck cool for 10 minutes before serving. After the duck has cooled, prepare the cucumber and spring onions by slicing them thinly, and steam the pancakes for 10 minutes. Serve with Hoisin sauce.
